Easiest pizza ever


When the moon hits the sky like a big pizza pie... This is a really quick pizza to make for lunch.

By using self-raising flour in the dough, the base will be soft and flaky with a biscuit feel. If you cut this into small soldier-like strips it would make a perfect finger food for little mouths. 

Also, why not get the older kids involved by helping - easy pizza-y.

Ingredients: (the shortest list of all time)

  • 1 and a half cups of self-raising flour (I use regular cups)
  • Half tablespoon of salt
  • A third cup of warm water
  • 3 table spoons of olive oil
  • 3 tablespoons passata (sieved tomato)
  • Teaspoon tomato puree
  • A handful grated cheese
  • Teaspoon of basil
  • Teaspoon of oregano 
  • Whatever toppings you have


  1. Pre-heat oven to 180 C gas mark 4. Spray an oven-proof tray with olive oil - no fancy pizza pans needed.
  2. Put the flour and salt into a bowl. Make a well in the middle (a hole) add the water and oil and using a spoon mix from the middle out.
  3. Put the dough on the centre of the oven-proof tray and spread to the edges with your fingers.
  4. Put the dish in the oven, centre rack and bake for 15 mins. Until the top has formed a crust.
  5. Take from the oven and add a spread of passata, tomato puree, cheese, herbs and whatever toppings you like (we love ham and pineapple).
  6. Bake for another 10 mins until cheese is melted and toppings are cooked.

Serve for a quick lunch or perfect for a picnic - and what's better, this is a pizza that you know exactly what's gone in to it!
